This is my first cooking challenge which I have taken up. And trust me it’s really a challenge. In this #TheMindSpinner challenge we are given 6 main ingredients and 3 common ingredients. Out of the main 6 ingredients we are suppose to choose any 3 and use the combination of these 3 main ingredients along with 3 common ingredients to prepare a main dish and a dessert.. Yes you heard it right the ingredients for the dessert and main course dish needs to be identical.. PHEW… I had to be very mindful while selecting these ingredients. The options were as follow

Main 6 Ingredients:

  • Strawberry
  • Mushroom
  • Dark Chocolate
  • Spinach
  • Sour Cream
  • Chilli (Any)

Common 3 Ingredients:

  • Salt
  • Brown Sugar
  • Potato

Imagine using potatoes / spinach or mushrooms in our dessert, so the name was actually in action mind spinning.. After lot of scribbling, research and thinking I zero down to Strawberry / Sour Cream and Chilli as my main ingredients.

The sponsors had asked to create a Gourmet, according to my understanding Gourmet dishes can’t be simple or one pot meal. They need to be made and assembled and needs to be something out of the box. And especially with these ingredients the box was also small.. lol. I have used few techniques to make this dish like Spiralizing the potatoes, roasting the strawberries, forming brittles to sauce and then shallow frying. It was a challenge in itself.. But I guess I managed to pull it off the way planned.

Trust me when I started I was not sure how my dish would look or taste, but as I kept going and changing things according to the dish requirement I was very pleased the way my dishes started to shape up and bonus was when my family loved the taste. I won’t be hesitant to say initially they were little reluctant to even taste it due to ingredients used.. My husband said – “ They look awesome, but I am not sure how will it taste knowing you have used strawberries in main course and potatoes in dessert” But after tasting he was surprised that well it hardly tasted the way it was suppose to.

Especially the taste of the strawberry sauce in the main dish, it’s hard to say it was strawberry sauce due to the way it was roasted, but yes visually seeing strawberries made the presence felt.

I am so very happy the way my dishes turned out. In this main dish the key were two things one the latkes to set and bind well and second the strawberries needed to be roasted well, for the colour and flavour to form.

Potato Latkes with Roasted Strawberry Sauce

Ingredients:Potato Latkes


  • 1 Large Potato
  • Salt to taste
  • 1 tsp Paprika
  • Olive oil to shallow fry


  • 3 tbsp Sour cream
  • Salt to taste
  • 1 tsp Paprika
  • ½ tbsp water

Strawberry Sauce:

  • 1 cup Strawberries
  • ½ cup brown Sugar
  • 1 tbsp Water


For preparing Strawberry Sauce:

  • Pre heat oven on 200°C, meanwhile wash and hull the strawberries and slit them in two.
  • In a mixing bowl add the halved strawberries and brown sugar and mix them well.
  • Line a baking tray with foil and spray with olive oil and then spread the strawberries on the tray.
  • Make sure they do not overlap and bake them for 25 minutes, in between mixing them and rotating the tray.
  • After 25 minutes you will find that the strawberries would have formed very brittle and hard. Let it cool down completely.
  • Then start breaking the brittles, your whole house would be full of the roasted strawberries aroma.
  • Once you have broken them in pieces carefully trying not to damage the whole strawberries. Reserve some brittles for the dessert and rest of them put in a micro safe bowl and add water and microwave the brittles for 1 minute on high or till the brittles have formed a sauce consistency. If needed add more water.
  • This step of forming brittles and then sauce helps strawberries to gain a roasted and rustic flavour. Which is very necessary for our savoury main course dish.
  • This sauce is not sweet but tangy and rustic in flavour, close to tamarind and dates sauce in taste. This enhances the taste of our Latkes.
  • Sauce is ready keep aside while we prepare our Latkes.

For preparing Latkes:

  • Wash, scrub and peel one large potato and using a spiralizer make potato spirals and put them in a mixing bowl.
  • Mix the potato spirals with salt and paprika, mean while in a pan heat olive oil enough to shallow fry the latkes.
  • Once the oil is hot enough start putting the spirals of potatoes in it. Start making rounds like pancake and overlapping the spirals for forming a circle shape, make sure to make small rounds and not too big. The key to this process is to overlap the spirals to form nest and not cutting them. The longer the spiral the firmed the latkes.
  • Once you have given it the round shape press it down using a spatula, this will ensure they bind together and cook properly.
  • Once the latkes are brown from the bottom carefully flip them over. If you have made the latkes properly by overlapping and pressed them down well it should not be a problem to flip them around. They bind well and get firm. Make other latkes also using the potatoes.
  • Once they are brown from both sides remove them on paper towel for remaining oil to be soaked. Your Latkes are prepared.

Topping Sauce:

  • In a mixing bowl take sour cream and whisk it properly using water. It should be in a pourable consistency.
  • Add salt and paprika and your topping is ready. Please remember the latkes also have salt so add salt accordingly.


  • On the serving plate place the Latkes and pour the topping sauce over it and topped with the strawberry sauce and sprinkle some paprika. Ta-Da!!
